Easy Peach Cobbler



Easy Peach Cobbler

1 pie crust
5 large peaches
1 cup sugar
1 ½ tsp. cinnamon
1 heaping tsp. Cornstarch
2 TBSP. water
2 tbsp. Butter
8 x 8 glass baking dish


Wash and dry peaches. Cut each peach into chunks leaving the peel on. In a large mixing bowl add peaches and 2/3 cup sugar. Sugar should coat the peaches. Allow to sit for approximately 2 hours. Peaches should make a syrup like liquid.  Mix 1 heaping tsp of cornstarch and 2 TBSP water in a small bowl until it is no longer lumpy.  Add cinnamon and cornstarch to the peaches mix thoroughly. Pour the peaches into an 8x8 glass baking dish. Dot with butter. Roll out pie crust. Place on top of the peaches. Sprinkle with the remaining sugar. Bake at 375* for 40-45 minutes or until the top crust is lightly golden brown. Peaches will be bubbly.
